Steam cooking on the Airbus A330-300.

The very small kitchen of this very large aircraft is where the meals for 335 passengers need to be reheated quickly, efficiently and most importantly in a way that guarantees quality. Convection ovens were originally used to reheat the meals, giving rise to the well-known problems of dry food that was unevenly heated. However, Airbus discovered the benefits of reheating meals using steam. Steam ovens have been used for some time now to reheat (vacuum packed) meals and meal components on long haul aircraft such as the Airbus A330-300. The steam oven on an Airbus is able to reheat over 50% of the meals. Anyone still doubt the quality and efficiency of ‘steam cooking’? More news if available
